Spicy Cherry Tomato & Peach Salad

I love fresh, tart cherry tomatoes and sweet, juicy peaches together. Add some salt and spice and you have yourself this amazing salad. This recipe is exactly what the title is says. It is dish that dishes up summer in all its glory.

This recipe serves 4 to 6 as a side. It is wonderful with a green salad, crusty bread, and protein (grilled fish, tofu, or meat).

The total prep time for this fresh salad is 15-20 minutes. The dressing was modified from a recipe in Ottolenghi’s “Simple” cookbook.

Gather up these ingredients and prepare this salad tonight.

  • 3 cups red and orange cherry tomatoes sliced down the middle (sweet 100s and sun golds if you can get them)

  • 1 perfectly ripe big beef tomato cut into 1” wedges and then into 1” pieces

  • 3 ripe, juicy peaches cut into 1” wedged and cut in half

  • 4 green onions chopped into 1/2” rings

  • 1 tablespoon finely chopped ginger

  • 1/4 teaspoon sea salt

  • 1 tablespoon lime juice

  • 1 teaspoon honey

  • 1 teaspoon diced serrano chili

  • 2 tablespoons olive oil

  • 1 1/2 tablespoon of fresh basil leaves cut into thin slivers (chiffonade)

Make the dressing by placing green onions, ginger, salt, lime juice, honey, chili, and olive oil in a small food processor and blitz until the ingredient are combined but still have some texture.

Place the tomatoes and peaches in a bowl. Add the dressing and toss to combine. Taste and add additional salt to your liking. Spread the salad on a platter and sprinkle with the basil slivers. Serve immediately.
